Raúl waited \u003cstrong\u003efive years\u003c\/strong\u003e before marketing the first vintage (2017), to ensure that the wine had the consistency and personality he was looking for.\u003c\/p\u003e\n\u003cp\u003eThe production is deliberately minimalist: fermentation and \u003cstrong\u003eaging for 12 months in used French oak barrels\u003c\/strong\u003e, without batonnage and without racking. Raúl puts the must into the barrel and leaves it for an entire year. This intentional passivity subjects the wine to a \u003cstrong\u003egentle natural oxidation\u003c\/strong\u003e that transforms the Albariño: it dulls its youthful sharp acidity and turns it into a dense, deep and eternal texture, with a golden color that has nothing to do with conventional Albariños.\u003c\/p\u003e\n\u003cp\u003eIn his own words: \u003cem\u003e\"Áreas de Montalvo is one more step, a wine that is based on aging, waiting, maturation.
