Subsequently, in the winery, a double selection was carried out: of clusters and of berries. The transfer of the must by gravity, carried out in a meticulous manner, allows the raw material to be respected as much as possible. During the fermentation process, yeasts and lactic acid bacteria native to our farm were used. The wine was refined in 225 and 600 liter French and American oak barrels for 12 months. The entire process was marked by precision and care in every detail. For greater protection, the wine contains sulfites. It was finally fined with natural egg white and bottled in the spring of 2025.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003ePago de Carraovejas 2023 is the interpretation of the Carraovejas estate: more than one hundred plots spread across the slopes of the valley and the moor. An environment in which the extensive biodiversity and respect for organic viticulture have achieved a unique landscape. On the surface, its tertiary soils of limestone marls, clays and sandstone outcrops force the vines to self-regulate and give their best. Plots that come together in an orography marked by its unique mesoclimate. Slopes facing south and north, each with its own personality, create the profile of the Carraovejas valley.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe 2023 cycle began with a not especially cold winter with few days with temperatures below zero. At the beginning of April, when the sap began to move, negative temperatures were recorded that affected the development of some very specific buds in a particular area. Finally, sprouting occurred normally in mid-April, following a phenological cycle without incidents. The summer was dry and hot with average temperatures during July and a heat wave at the end of August. September began with torrential rains on days 3 and 4. The harvest began with uncertain days with some precipitation to give way to days with extreme temperatures of 30 degrees for several hours throughout the day.
