The personification of the distillery's own style. Its complexity comes from a two-stage maturation system directed by master distiller Richard Paterson.
Initial Maturation: 12 years in American white oak barrels that previously contained bourbon.
Finishing: The last 3 years the whiskey has been divided into three different types of Sherry barrels from the González Byass winery: Loving, Apostles and Oloroso Matusalem.
Assembly: Finally, the liquids are gathered in an upright Sherry cask to harmonize the flavors before bottling.
