Paco & Lola is a winery founded in 2005 by a group of winegrowers and producers from the O Salnés region who decided to professionalize their production. This cooperative, officially called "Sociedad Cooperativa Vitivinícola Arousana," currently has over 430 members, making it the largest cooperative in the Rías Baixas Designation of Origin (DO) by membership.

The winery has 220 hectares of its own vineyard spread over more than 2000 plots, characteristic of the Galician minifundio and located entirely in the subzone of “Val do Salnés”.

Our facilities are equipped with the latest technology applied to the wine sector. This modern technology, combined with the tradition of our winegrowers and the expertise passed down from generation to generation, allows us to obtain the maximum expression of the grape, guaranteeing a magnificent result year after year.

Throughout the year, our viticulture department carries out meticulous work focused on advising and monitoring the vineyards to achieve the highest quality grapes at harvest time. These exhaustive controls are applied not only to all our vineyards but also at every stage of the winemaking process, guaranteeing the highest quality in our products.

Albariño is an early ripening variety, so the start of the harvest is normally in the second half of September. and it happens over two weeks, a time that varies depending on the state of ripeness and the amount of grapes to be harvested.

Following tradition, the grape harvest is done manually in boxes with a maximum capacity of 20 kilograms, so that the grapes are kept in optimal conditions from the time of harvest until their reception at the winery.

Albariño is considered one of the most important grape varieties cultivated in Galicia. It is an early-ripening variety with small bunches, golden and sweet berries, notable for its high sugar production and rich acidity.
